After a few days of discussions amongst the travel group, Vivian, and Glenn, we have decided to postpone the trip for a short time. We have asked for a new consulate appointment in an additional 3 weeks.

Good and bad news day. We have travel date (5/12) and consulate date (5/21) - but inter-province travel in China may be shutting down. We have a long few days of waiting for more news ahead of us.
